Method:
1. Carefully melt 400 g of your chocolate in a double boiler or microwave. Once melted, slowly add in the remaining un-melted chocolate. Stir constantly until it has melted and the chocolate is glossy and shiny.
2. Spoon the melted chocolate into the moulds, making sure to move it around until the inside of the mould till fully coated. Then turn it upside down and tap out most of the chocolate, then place in the fridge to set. Repeat this process 2-3 times to create a chocolate shell with a hollow for filling.
3. While the final coat is setting, mix the compound flavouring of your choice with the white chocolate filling. If the filling is too firm to mix you can heat slightly in a microwave to achieve a good texture.
4. Fill the eggs with your flavoured white chocolate filling and smooth the tops with the edge of a pallet knife. Leave to set in the freezer so it is hard enough to handle.
5. Pop the eggs out the mould and set to one side.
