Four Christmas Treats That Sleigh

Seasonal treats are always a popular edition to any menu. Encouraging customers to get into the spirit of the season with Christmas foods. Here are a few Christmas recipe ideas to add to your menu and tempt taste buds this festive season. 

Santa's Soda

Santa’s Soda 

This sweet drink is perfect for adults and children alike. Santa’s Soda’s bright red colour and fresh fruity flavour are the perfect addition to Christmas drinks menus. Allowing everyone at the table to partake in a seasonal drink over Christmas dinner, without the alcohol. 

Ingredients: 

Toschi Cherries 

10ml Elderflower Syrup 

Soda/Lemonade 

Crushed Ice 

Method: 

1.      Place your ice in a martini glass. 

2.      Carefully siphon 1 teaspoon of syrup from the Toschi Cherries and add to the ice. Followed by the Elderflower syrup. 

3.      Add soda or lemonade to fill the glass. 

4.      Place a single cherry on top before serving. For an alcoholic version, try adding a shot of cherry brandy.  

Jingle Ball Cookies

Jingle Ball Cookies 

Is there anything more nostalgic than leaving out milk and cookies for Santa on Christmas night? These simple cookies need only 2 ingredients, and you can have fresh homemade cookies that Santa is sure to love. There won't be any left by Christmas morning. 

Ingredients: 

Caramel and Chocolate Cookie Dough 

Mini Sugared Coating Cocoa Buttons

Method: 

1.      Slice your cookie dough into thick rounds and roll into a large circle. 

2.      Pour a tablespoon of smarties into the centre of each circle. Carefully fold in the edges to create a ball with the smarties encased inside. 

3.      Bake in the oven at 180 degrees for 8 minutes until golden brown. 

4.      Remove from the oven and allow to cool completely. 

5.      Plate and serve with a glass of cold milk (or beverage of your choice) for Santa. 

Chocolate Snowballs

Chocolate Snowballs     

We all wish for a white Christmas, but don’t necessarily get it come Christmas day. Bring the fun of the snow to your Christmas menu this year with this easy recipe that will delight all your customers. 

Ingredients: 

100g Cream Cheese 

160g Dark Cookie Crumb 

Luxury White Chocolate 

Silver/Gold food colouring 

Cake Pop Sticks 

Method: 

1.      Combine the cookie crumb with the cream cheese and mix until smooth. 

2.      Portion into 8 even sized pieces and roll into a ball. 

3.      Dip your cake pop sticks into a small amount of the chocolate, then push into your cake balls. Place the balls in the freezer for around 1 hour to firm. 

4.      Meanwhile, melt the white chocolate over a Bain Marie in a deep bowl and move ¼ to a small bowl. 

5.      Using your food colouring, dye the smaller bowl of chocolate your desired colour. 

6.      Swirl a small amount of the coloured chocolate onto the white chocolate to create a marble effect. 

7.      Carefully, dip your cake pops into the melted chocolate mixture, twisting slightly as you remove. Add a little more of the coloured chocolate between each cake ball so they all pattern. 

8.      Place the cake pops on a tray and store in the fridge.  

Florentine Parfait

Florentine Parfait 

Florentines are a traditional Christmas treat. This recipe mixes the classic taste of Florentines with a sweet cherry parfait. Before topping with a rich chocolate cherry sauce and a dusting of chopped nuts. Creating an extra special, perfect Christmas dessert. 

Ingredients: 

Chopped Mixed Nuts 

Toschi Candied Cherries 

Luxury Dark Chocolate 

230ml Double Cream 

2 Large Eggs 

30g Caster Sugar 

Method: 

1.      Heat 90ml of double cream in a pan over a medium heat until simmering. 

2.      Meanwhile, put the egg yolks in a large bowl with a mixer and add 15g caster Sugar. Whisk until the mixture becomes pale and thick. 

3. Add the hot cream to the egg mixture and whisk to combine. This is your custard base.  

4. Put your egg and cream mixture back in the pan and heat gently while stirring, until the custard becomes thick and coats the back of a spoon. 

5. Remove from the heat and set aside to cool. 

 In a separate bowl, beat your egg whites until they form soft peaks. In an additional bowl, whisk 90ml cream until thick. 

7. Drain your Cherry debris, reserving the syrup for other recipes, and mix them into the cooled custard mixture. 

8. Using a metal spoon, carefully fold your egg whites into the custard, followed by the cream. 

9. Pour the mixture into a 500g loaf tin, lined with cling film. Freeze for 2 hours. 

10. Remove from the freezer and give the mixture a gentle stir, redistributing the cherries. 

11. Place the parfait back in the freezer and leave overnight. 

12. To make the chocolate cherry sauce, in a pan, heat your chocolate chips until melted. Add the remaining cream, and 1 tablespoon of the syrup. 

13. Remove the parfait from the freezer ten minutes before serving. Slice and serve with the chocolate cherry sauce and sprinkle with the chopped nuts.
